My favourite food
My favourite food is a local delicacy that is rather famous in Singapore...its, CURRY CHICKEN!!!!!!!! Mmmm...curry chicken...anyways, these are the ingredients which actually are quite gross BUT when put together, makes a delicious concoction. The taste of that sweet yet ever so spicy gravy and chicken is so magnificient to the human toungue. Or at least my tongue. I am pretty sure that this dish is one of the most popular dishes in Singapore as every where you go you are bound to find this famous delicacy. Be it a mere restaurant or a famous coffee-shop. My mother makes the perfect Curry chicken as it is so rich in flavour and if you concentrate hard enough you can taste all the wonderful flavours of the coconut, the curry powder, all the different spices and of course, the essential, curry leaf that is freshly grown in my garden. Once you have sampled this dish, even your escargot and even the famous Singapore Chilli Crab is second to this. Have i tempted you enough? Go now. Cook this dish and spread the word.
1 pound chicken breasts, boneless, skinless
2 potatoes
1 red onion
2 tablespoons oil for stir-frying
2 tablespoons curry paste (traditional Indian yellow curry paste is best)
3/4 cup chicken broth
1 teaspoon granulated sugar
Salt and pepper, to taste
1 cup long-grained rice
1/2 teaspoon ground coriander, or to taste
